Normally, me and Hunky Husband don’t get a huge amount of time together. He works long shifts and gets home late. So, we try hard to try to spend quality time together when we can. I cook for him at 10 pm and we have late night date nights. We play board games and lock our phones in other rooms. It’s actually quite lovely.
Over the last few weeks, we’ve had a lot more time together. We’ve been eating with the kids every night. Which is great, I love eating as a family. But, by the time they go to bed, we’re tired and end up sitting watching TV playing on our laptops not doing anything special. I’m sure this complacency affects all of us in long-term relationships. But, we decided to do something about it.
We had a date night. We put the kids to bed early, Husband cooked me one of my favourite meals, Chicken and blue cheese pasta and we shared a bottle of incredibly good value Aldi wine. Then we snuggled up on the sofa and watched a DVD together (Aliens, which somehow, I had never seen!). I then went to bed on my own because an amazing job came up and Husband wanted to fill in the absolutely huge application form before bed. But, until then it was a perfect evening.
I’ve shared a chicken and blue cheese pasta recipe before. But it was in the early days of blogging and I don’t think I did it justice so I’ve decided to do it again because it’s so yummy.
You Will Need
- 2 Chicken Breasts
- 100g Mushrooms
- 110g Blue Cheese
- 300ml Double cream
- Salt and pepper
- Pasta to serve
This recipe serves 2, but if you wanted to feed a family, just add extra chicken and mushrooms. You shouldn’t need any extra cream. There are some other simple changes you could make too. We sometimes have the blue cheese sauce without chicken for a lighter meal. You could also use single cream to lower the fat content. 110g gives you quite a light blue cheese flavour so if you’d prefer stronger, simply add more.
There are also options when it comes to accompaniments. I love tagliatelle, but it would work equally well with penne or spaghetti so use whichever you prefer. We also serve it with garlic bread and salad because we’re big fatties!
Firstly, roughly chop your chicken and mushrooms. Fry the chicken in a little oil until browned. Add the mushrooms and fry for a few more minutes.
When softened pour in the cream. Stir together well and sprinkle in the blue cheese.
Stir continuously until the cheese has melted. At this point, I taste the sauce before adding salt, pepper and more cheese to taste.
Simmer for around 10 minutes until the cream has thickened slightly and the chicken is well cooked. Remember to cook your pasta!
Once ready, we pour the chicken and blue cheese into the pasta and mix together before serving. Making sure the pasta is well covered.
Serve your chicken and blue cheese pasta with salad and garlic bread for a filling, tasty meal.

- • 2 Chicken Breasts

- • 110g Blue Cheese
- • 300ml Double cream
- • Salt and pepper
- • Pasta to serve
- Roughly chop the chicken and mushrooms
- Fry the chicken in a little oil until browned
- Add the mushrooms and cook for a further 3 minutes
- Pour in the cream and mix together
- Sprinkle in the blue cheese and mix together
- Stir regularly and add salt and pepper to taste
- Allow to simmer for around 10 minutes until the cream has reduced and the chicken is well cooked
- Serve with tagliatelle and salad
