Chicken and Chorizo Tray Bake

As a busy mum of young kids, I don’t think there’re many recipes better than those you can just throw everything in one tray or pan and leave to cook. And if you can get loads of veggies in it, even better.

This is one of those recipes, it’s got lots of different flavours, doesn’t take much effort, is really filling, and gets absolutely loads of vegetables into you.

You will need:

  • 4 Chicken breastsingredients for chicken and chorizo tray bake
  • 75g Chorizo
  • 1 Onion
  • 1 Red onion
  • 500g new potatoes
  • 3 Courgettes
  • 1 Red pepper
  • 1 Green pepper
  • 10 Cherry Tomatoes
  • Olive oil
  • Pinch Salt and pepper.
  • Tsp Smoked Paprika
  • 0.5 Tsp cayenne pepper
  • Pinch Chilli Powder

Preheat the oven to 180 degrees.

Peel the onions and cut into 8, chop the potatoes in half, slice the courgettes and peppers roughly and put them all into a large lightly oiled baking tray. Slice the chorizo into thin slices and add to the tray.

Place the chicken breasts evenly on top of everything else and lightly drizzle with olive oil. I give it a few sprays with Fry Light Olive Oil. Mix together the salt, pepper, chilli, paprika and cayenne pepper and sprinkle over the top. If you don’t have any of these, it’s still amazing with just a pinch of salt and pepper, this just adds a little spice.

Put it in the oven and leave to cook for 30 minutes, before removing and scattering the cherry tomatoes throughout the tray. Return to the oven and cook for a further 10 minutes or until the potatoes are nice and soft.

Make sure the chicken is thoroughly cooked and serve. The beauty of this dish is that if someone doesn’t like one ingredient, it’s really easy to just give them more of something else without it becoming less healthy.

I have made it with sweet potato instead of new potatoes, which was also absolutely gorgeous, you could add anything you really like, or take something out and I’m sure it would still be delicious.

Instructions

  1. Preheat the oven to 180 degrees
  2. Peel the Onions and cut into 8
  3. Cut the Potatoes in half
  4. Roughly slice the Courgettes and Peppers
  5. Put them all into a large lightly oiled baking tray
  6. Slice the chorizo, add the the baking tray
  7. Lay the chicken breasts on top
  8. Lightly Drizzle it all with olive oil
  9. Mix the spices together and sprinkle over the top
  10. Bake in the oven for 30 minutes
  11. Remove and add the Cherry tomatoes
  12. Bake for a further 10 minutes
