Loaded Potato Skins

Jacket potatoes are a win in our house. We generally go for a classic bean and cheese combo. Loaded potato skins are a great way to add a bit of verity to your lunch time potato. Bacon and either onion or leek is my favourite. But there are loads of different things you could try. For this recipe, I used 5 small-medium potatoes, that’s what we had in. It would work with 2 or 3 large also.

You will need:loaded potato skin ingredients

  • 5 Medium white potatoes
  • 50g Butter
  • 12 Rashers streaky Smokey bacon
  • 1 leek
  • 100g Double Gloucester Cheese
  • Olive oil

Preheat the oven to 180 degrees.

Prick the potatoes several times with a fork, then rub with olive oil. Bake in the oven for 1 hour. Adjust the time depending on the size of the potatoes.

Towards the end of the hour, chop the bacon and leek roughly. Fry in a little oil for a few minutes, until the bacon is starting to brown and the leek is nice and soft. Set to one side.

Once cooked, cut the potatoes in half, and scoop the middle out into a large mixing bowl. Add the butter, and mash together. Add the bacon and leek and stir it all together well.

Place your skins on to a large baking tray, and spoon in the potato mixture. Top each one with a slice or 2 of cheese, then place under the grill for a few minutes. Until the cheese is bubbling.

Serve with sour cream.

  3. Bake in the oven for 1 hour
  4. Roughly chop bacon and leek
  5. Fry in a little oil for a few minutes until starting to brown
  6. Set to one side
  7. Once the potatoes are baked, cut in half and spoon inside into a large mixing bowl
  8. Mash with butter
  9. Add bacon and leeks
  10. Mix together well
  11. Set skins onto a large baking tray and evenly divide potato mixture between them
  12. Top with cheese
  13. Place under a grill for 5 minutes or until the cheese is bubbling
