One Pan Sausage Roast

I have previously expressed a great love of sausages. I also love any meal that you can add loads of vegetables to. This one meets both of those requirements for a great family meal. It’s also, super easy, and ridiculously cheap. Feel free to change any of the vegetables if there’s anything you’d prefer. This one was literally made up of things we had in.

  • 8 Pork Sausages
  • 500g New Potatoes
  • 3 Courgettes
  • 1 Onion
  • 1 Red pepper
  • 1 Large carrot
  • 1 Yellow pepper
  • 2 Cloves garlic
  • 500 ml Beef stock
  • 1 tsp. Smoked paprika
  • 1 tsp. Mixed herbs
  • 2 tbsp. cooking oil
  • Pinch salt and pepper

Chop it all up, throw it in a pan! Honestly, it’s only slightly more complicated than that!

Preheat the oven to 180 degrees.

Peel and roughly chop the carrot. Chop the courgettes and peppers. Chop the onion in to 8 wedges. Cut the new potatoes in half. Quarters for big ones, these are the slowest things to cook, so you don’t want them to be too big. Finely chop the garlic.

Add all these vegetables to a large, deep roasting tin. Nestle the sausages on the top. Pour in cooking oil, and mix it all up. I prefer to use an olive oil spray; I find it gives you better coverage without needing to use loads. Next, sprinkle over the salt, pepper, paprika and herbs, and bake for 20 minutes.

Towards the end of this 20 minutes, make up 500 ml of beef stock, to the packet instructions. When the 20 minutes is up, remove the pan from the oven, add the beef stock and give it another good stir. Put back in the oven for a further 20 minutes.

After 20 minutes, stab a larger potato to see if they’re soft and cooked, if not put back for another 10 minutes, keep checking until they’re cooked.

Instructions

  3. Cut onion in to 8 wedges
  4. Finely chop the garlic
  5. Add all the vegetables to a large, deep baking tray
  6. Nestle sausages on top
  7. Add cooking oil and stir all together well
  8. Sprinkle over salt, pepper, smoked paprika and mixed herbs
  9. Bake in the oven for 20 minutes
  10. Make up beef stock to packet instructions
  11. Add to tray, mix everything together
  12. Bake for a further 20 minutes
