Double Decker Rocky Road is a combination of two of my favourite things on earth. Well, of one of them, and a smaller version of the other one. Rocky Road is beautiful. It’s basically chocolate biscuits with extras thrown in. The best thing about it is that you really can add pretty much anything. I tend to stick to raisins and cherries for the fruity bits because I think they are perfect with chocolate. But, then when it comes to the extra bits, anything goes. My mini egg and creme egg rocky road were perfect Easter treats.
Double Deckers are right up there with KitKat Chunkys on my favourite chocolate treats list. I love them. KitKat Chunky is my ideal afternoon with a cup of coffee treat; Double Deckers are for the rest of the time!
For my Double Decker Rocky Road, I decided to use the little ones. You know the mini versions that come in a sharer bag (lol). I believe Cadbury’s call them “Dinky Deckers.” I thought this would be easier than chopping big ones. I did, however, chop the little ones in half, so that they’d spread further.
If you’d prefer, you could use big Double Deckers in your Double Decker Rocky Road. It might even be better, to be honest. I’d say 2 bars chopped into slices would be enough. Maybe 3 if you want some on the top as well. I’d recommend freezing them for a while first so that they hold their shape in the melted chocolate and don’t melt.
My Double Decker Rocky Road Recipe
Double Decker Rocky Road
A fabulous sweet treat with a little bit extra!
- 225g Digestive biscuits – Crushed into large chunks
- 128g Dinky Deckers – or 2-3 Sliced Double Deckers
- 150g Butter – Plus extra to grease
- 3tbsp Cocoa
- 3tbsp Caster Sugar
- 3tbsp Golden Syrup
- 50g Raisins
- 50g Glace Cherries – Chopped into 1/4s
- 50g Mini Marshmallows
- 400g Milk Chocolate
- Step 1 Lightly grease an 8”x10” tin and line with greaseproof paper
- Step 2 Add the biscuit chunks, marshmallows, raisins, and cherries to a large mixing bowl.
- Step 3 Add the Double Decker bits (either whole, in half or sliced), retaining half for on top if you wish.
- Step 4 Put to one side.
- Step 5 Melt the butter, cocoa, sugar and golden syrup over a low heat in a small saucepan. Stirring constantly until smooth.
- Step 6 Pour this buttery mixture into the dry mix and stir until well coated.
- Step 7 Tip into the lined tin and press down with the back of a spoon to compact.
- Step 8 Place in the fridge to cool while you melt the topping.
- Step 9 Melt the chocolate in a small pan or microwave.
- Step 10 Remove the base from the fridge and pour over the chocolate, spreading evenly.
- Step 11 Sprinkle over any retained Double Deckers.
- Step 12 Cool in the fridge for at least 2 hours until firm and set.
Each square of Double Decker Rocky Road contains around 300 calories.
If you prefer, it’s fine to use Rich Tea biscuits instead of digestives.
