I love brownies. I think they are basically perfect. Super rich, but also sweet and gooey. I love them when the middles are so soft and moist, and the tops are cracked and papery. When you move them out of the pan and the top cracks, I get such a sense of satisfaction. It’s just so pretty. I also love Nutella. I’m one of those people that can eat it with a spoon straight out of the jar. So, at some point, I was always going to try to make Nutella Brownies.
I think everyone that spends a bit of time in the kitchen eventually has a thing that they perfect. Something that always tastes amazing, that they love making, and that they can have fun experimenting with. At some point, Brownies have become my thing. My Nutella Brownie recipe is quite different from the first brownies I wrote about. They’ve developed and improved over time. The first ones were fantastic, but they took a long time to cook and contained huge amounts of sugar. These Nutella Brownies have the same fantastic texture, a gorgeous, rich, chocolatey taste, with half the sugar and half the cook time. I think I’ll be taking this recipe forward to try with other things.
My Nutella Brownies don’t have the strongest Nutella flavour. There are some recipes out there that get all of their chocolatey goodness from Nutella. They use a whole jar (400g), with no other cocoa or chocolate. They’re like biting into a chunk of Nutella in brownie form. I find this a bit much. It’s totally personal preference though. My Nutella Brownies are more of a chocolate brownie, with a hint of hazelnut. You can taste the Nutella flavour, but it’s not too much. If you prefer more Nutella, play around with the Nutella to chocolate ratio until it’s just right for you.
I love making these, as you stir in the flour and cocoa, you can feel the mixture getting thicker and stickier, it’s nothing short of beautiful. They smell that good that Michael actually left Minecraft upstairs and came down to ask what I was making. Which is incredible! The day I made this batch, we were in the midst of snow. It was one of those days where schools shut and people abandon cars, so we were having a snow day at home. I’m terrible at not doing anything. I often go and have a bath, because it forces me to rest. But, first, I made these brownies. The perfect use of a morning in I think! We then spend the afternoon eating them!

Adjust the Nutella/Dark chocolate ratio for a stronger Nutella flavour.
I bake my brownies in a greaseproof paper lined baking tray that's 12" x 10" and around an inch deep.
