Meal Plan Week Six: All the Meat

I love the occasional meat-free meal. Vegetables are fantastic. They have a brilliant texture and yummy flavour and I honestly think some meals taste better without meat. However, this week, there was none of that! It’s been a very meaty week.

But, even on big meat weeks, I do my best to fill our meals with vegetables. I’m very lucky that both kids will happily eat anything from sprouts to carrots and I never have to worry about hiding them or bribing them to eat. That said, I think sometimes when you cook, it’s easy to forget the veg. I’ve just cooked a beef stroganoff, I bought a broccoli to go on the side and completely forgot to do it. So, I try my best to make sure there’s plenty in the meals so I don’t have to worry about it. The stroganoff, for example, had onion and lots of mushrooms.

Monday – Pork and Cider Casserole

This was incredible. Without meaning to blow my own horn as it were, this was I think one of the best things I’ve ever made. It was quite tangy, so I was surprised at how much the kids enjoyed it. I cooked mine in a cast iron pan in the oven, low and slow. But, it would also be fantastic in a slow cooker.

Tuesday – Enchiladas

This was husbands request. We always cheat and buy a pack from Asda, adding some extra peppers as we go. It’s one of his favourites. Which perhaps doesn’t say much for my cooking!

Wednesday – Pasta Bake

I love a good pasta bake. Lots of cheese and lots of pasta, all thrown together and baked. Perfect! The Boy likes to have about 20 pieces of bread and butter with his since Husband introduced him to a pasta sandwich. All the carbs!

Thursday – Cottage Pie

Cottage pie is another of our favourites. I tend to make enough for two and freeze one. So expect to see this on next week’s meal plan too!

Friday – Beef Stroganoff

I use absolutely loads of mushrooms in my stroganoff. I adore mushrooms, and they’re perfect in this slightly spicy, creamy sauce. I wasn’t sure what to serve it with. Husband said chips or rice but I fancied mash. So, we had mash!
