Pork Souvlaki Wraps

Following on from the success of our Beef stifado and Greek takeaway we really fancied more Greek food. We have chicken souvlaki wraps quite often. I love making flatbreads and they work perfectly. The kids love them too. So, fresh and tasty. But, we’ve been eating so much chicken lately and fancied a bit of a change. That said, it’s a tiny tiny bit of a change. My Pork Souvlaki Wraps are exactly the same, but with pork instead of chicken.

I make my own flatbreads and tzatziki, but it’s by no means necessary. If you want a quick and easy meal, throw the marinade in with the pork the night before and then pick up the rest on your way home from work. We’re very much pick it up on the way home from work shoppers!

If you do want to have a go at my recipes for flatbreads and tzatziki, please do give them a read. They’re pretty simple. Just take a little more time. I’m always hugely amazed by how much juice comes out of a cucumber. Honestly, it must reproduce!

Ingredients

  • Flatbreads
  • Tzatziki
  • Salad, tomatoes, peppers and onion to serve
  • 700g Diced pork
  • 3 Cloves of garlic
  • 3tsp White wine vinegar
  • 3tsp Lemon juice
  • 1tbsp olive oil
  • 3tbsp Greek yogurt
  • 1tsp Mixed herbs
  • Pinch salt and pepper

Method

So, you just finely chop the garlic, throw it in a tub with the pork, vinegar, lemon juice, oil, yogurt, herbs, salt and pepper, cover and shake.

Pretty much it. I tend to make the marinade in the morning and leave it until later that day, but you could leave overnight. I’d say it needs at least 2 hours.

When you are ready, fry the pork in a little oil for around 10 minutes until cooked through. Serve on flatbreads with tzatziki and salad for the perfect Pork Souvlaki Wraps.
