Roasted Red Pepper and Halloumi Flatbreads with Sweet Chilli and Ginger Sauce

I love Halloumi. Sometimes, I just fry a whole block and eat it on its own. It’s beautiful. I put it on burgers, in one pot bakes, and on these gorgeous homemade flatbreads. Husband is the biggest meat eater ever, but will indulge my halloumi love and go meat-free occasionally, and, if he won’t he can cook for himself! I must say though that the kids aren’t keen. Halloumi is one of the few things that they’re not sure about. I think it’s the texture more than the taste, to be honest. Poor Bobsy ends up chewing on it for ages because she isn’t sure what to do with it. So, when we have our Roasted Red Pepper and Halloumi Flatbreads with Sweet Chilli and Ginger Sauce they have the rather wonderful fish finger flatbreads.

Roasted Red Pepper and Halloumi Flatbread with a Sweet Chilli and Ginger Sauce

This makes a great healthy (ish) dinner with sweet potatoes or a fantastic lunch. You can keep the sauce and just quickly grill some Red Pepper and Halloumi in a little oil. I make my flatbreads, but it would work well with store-bought flatbreads, wraps, naans or even burger buns.

I do highly recommend the flatbreads though. I ate three of them the night we made these. A block of halloumi will only really do two flatbreads, so once they’d been eaten I honestly just sat dipping the flatbreads in mayo. Lovely I know!

Ingredients

  • 225g Halloumi Cheese
  • 2 Red Peppers – Sliced into ¼’s
  • ½ tsp grated root ginger
  • 2tbsp Honey
  • 2tbsp Light brown sugar
  • 2tbsp Reduced salt soy sauce
  • 1tbsp Hot Chilli Sauce
  • Flatbreads or wraps

Notes

I use Pip’s hot sauce, you could make your own, but for the amount you need, I’m not sure it’s worth it. If you prefer your sauce a little hotter, add more hot sauce.

This makes quite a bit of sauce. We generally just drizzle a little on the cheese so have quite a bit left. I keep it in the fridge and use it as a salad dressing. But, you can use it all on your wraps, or even pour some on your halloumi as you cook it. It’s totally up to you and depends on how much-added flavour you want on your Roasted Red Pepper and Halloumi Flatbreads.

Method

To make the sauce, whisk together the ginger, honey, sugar, soy, and chilli and set to one side.

Sweet Chilli and Ginger Sauce

When you are ready, drizzle the Red Peppers in a little oil and roast on a baking tray at 180degrees for 30 minutes, flipping over halfway. Grill or fry your halloumi for a few minutes on each side.

Lay the halloumi on a Flatbread, top with peppers, drizzle with Sweet Chilli and Ginger Sauce and add salad before wrapping.

You can serve your Roast Red Pepper and Halloumi Flatbreads with salad, chips or our favourite sweet potato wedges for a yummy, and incredibly colourful, meal.
